Est\u00e1 en el sofrito que inicia un guiso, en el chorrito final sobre una tostada, en la ensalada que no necesita m\u00e1s ali\u00f1o, en la sart\u00e9n donde se fr\u00ede un huevo perfecto, en el plato hondo que recoge el jugo del tomate reci\u00e9n cortado.<\/p>\n<p><strong>El aceite de oliva no se esconde en la receta<\/strong>: la sostiene. Da brillo, suaviza, refuerza o redondea. No es un a\u00f1adido, es la base.<\/p>\n<p>Y hay algo que lo hace especial: no pertenece a la cocina industrial, sino a la tierra. Nace del \u00e1rbol, pasa por el molino, llega a la botella y despu\u00e9s a la mesa. No tiene aditivos, no necesita explicaci\u00f3n.<\/p>\n<h2>Elegirlo bien cambia el plato, aunque sea el mismo<\/h2>\n<p>No todos los aceites de oliva saben igual. El virgen extra \u2014el de primera extracci\u00f3n, sin refinar\u2014 concentra todo lo que la aceituna quiere decir: fruta, amargor, frescura, picor suave o intenso seg\u00fan la variedad. Es el mejor para tomar en crudo: pan, ensaladas, verduras asadas, pescados blancos, platos que agradecen un toque final antes de servir.<\/p>\n<p>Los aceites m\u00e1s suaves \u2014arbequina, empeltre\u2014 combinan con sabores delicados; los m\u00e1s potentes \u2014picual, cornicabra\u2014 sostienen carnes, legumbres, pan tostado, quesos curados. Cocinar con uno u otro no cambia la receta: cambia el mensaje.<\/p>\n<p>Tambi\u00e9n importa el uso. Conservar un buen aceite lejos de la luz, en botella opaca y bien cerrada, es proteger su sabor. <strong>Usarlo siempre en crudo, solo \u201cporque es caro\u201d, es desaprovecharlo: un sofrito con buen aceite vale m\u00e1s que mil salsas.<\/strong><\/p>\n<p>El <a href=\"https:\/\/eldigitaldeasturias.com\/radio\/category\/gastronomia\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #ff6600;\"><strong>aceite de oliva<\/strong><\/span><\/a> ense\u00f1a una verdad sencilla: la calidad de un plato no siempre depende del ingrediente protagonista, sino del que lo acompa\u00f1a sin pedir protagonismo.<\/p>\n<p>El aceite de oliva no es tendencia, es permanencia.<strong> No se mide por moda, sino por historia, salud y sabor.
