Consiste en una Base de Datos de Composici\u00f3n de Alimentos y Bebidas, que permite tener informaci\u00f3n actualizada a partir del etiquetado nutricional de miles de alimentos.<\/strong><\/p>\n<p>Los investigadores del Instituto Universitario CEU Alimentaci\u00f3n y Sociedad presentan ahora un an\u00e1lisis m\u00e1s pormenorizado de los datos generales a partir de 18 infograf\u00edas -una por cada grupo de alimentos y bebidas seg\u00fan la clasificaci\u00f3n de la OMS Regi\u00f3n de Europa 2023- en las que se puede observar en detalle la cantidad de los principales nutrientes que aporta cada categor\u00eda, siempre seg\u00fan el an\u00e1lisis del etiquetado de la muestra estableciendo la mediana, y destacando aquellos nutrientes que, potencialmente, m\u00e1s influencia tienen en la <a href=\"https:\/\/candas365.es\/noticias\/tag\/salud\/\"><span style=\"color: #ff6600;\"><strong>salud<\/strong><\/span><\/a>: grasas saturadas, az\u00facares totales y sal.<\/p>\n<h2>FOCO EN NUTRIENTES<\/h2>\n<p><strong>\u201cLas nuevas infograf\u00edas extra\u00eddas de Tabula permiten ahondar m\u00e1s en cada uno de los grupos de alimentos, poniendo especial foco en tres nutrientes: grasas saturadas, az\u00facares y sal, los nutrientes cr\u00edticos que m\u00e1s han sido reformulados por la industria agroalimentaria en los \u00faltimos a\u00f1os\u201d, apunt\u00f3 el profesor Gregorio Varela-Moreiras<\/strong>, Catedr\u00e1tico de Nutrici\u00f3n y Bromatolog\u00eda de la Universidad San Pablo-CEU e investigador principal de este proyecto.<\/p>\n<p>En concreto, sobre las grasas saturadas, se observa que los grupos de mantequilla y otras grasas y aceites; los quesos y la confiter\u00eda de chocolate y az\u00facar, barritas energ\u00e9ticas, postres y toppings dulces son los que m\u00e1s contenido aportan seg\u00fan la mediana de la muestra analizada sobre la informaci\u00f3n declarada en el etiquetado. Dentro de estos tres grupos, el subgrupo de mantequilla, mezclas de mantequilla, margarina y aceites untables es el que muestra una mayor cantidad de grasas saturadas: 54,0g\/100g o 100ml (mediana expresada en rango intercuart\u00edlico de 26,2 &#8211; 56,5).
