Foto: Christin Klose\/dpa<\/figcaption><\/figure>\n<p>Mucha cantidad a la vez hace que la temperatura baje bruscamente y que los ingredientes se cuezan a fuego lento en sus propios jugos. <strong>El efecto wok deseado en sabor y consistencia se consigue procediendo de forma planificada.<\/strong><\/p>\n<p>Si decide preparar un plato al wok, no utilice m\u00e1s de tres a cinco ingredientes principales<strong>. Las verduras adecuadas son br\u00f3coli, zanahorias, calabacines y pimientos, col pak choi y col china, guisantes y cebolla verde. Se pueden complementar con carne, pescado, mariscos o tofu, pero tambi\u00e9n con setas y brotes de bamb\u00fa.<\/strong><\/p>\n<p>La preparaci\u00f3n de los ingredientes es la clave. Antes de comenzar el salteado en el wok, se deben tener a mano todos los ingredientes cortados en trozos m\u00e1s o menos del mismo tama\u00f1o. Una vez que el wok est\u00e1 caliente, se a\u00f1ade una peque\u00f1a cantidad de un aceite resistente al calor, como el aceite de cacahuete o de colza.<\/p>\n<p>Luego se deben colocar los ingredientes en el orden correcto: la carne, el pescado o el tofu se fr\u00eden primero y se ponen a un costado. Reci\u00e9n despu\u00e9s se fr\u00eden las verduras y las especias, como el ajo y el jengibre. Las verduras m\u00e1s duras, como el br\u00f3coli, requieren m\u00e1s tiempo que los guisantes tiernos o las setas. <strong>Los ingredientes deben removerse constantemente con una cuchara de madera<\/strong><\/p>\n<p>Si las verduras amenazan con quemarse, se puede agregar a la sart\u00e9n unas cucharadas de caldo de verduras. <strong>En algunas recetas, poco antes de servir se a\u00f1ade al wok una salsa ya preparada, como pasta de miso, sambal oelek o leche de coco, y se calienta brevemente.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>(dpa) &#8211; Los platos al wok son ideales para una cocina r\u00e1pida y baja en grasas.
