Pero no es as\u00ed en absoluto. <strong>El arroz, en Catar, nunca es guarnici\u00f3n. Es enriquecido tanto con ingredientes y condimentos, que las papilas gustativas despiertan y piensan: es una fiesta.<\/strong><\/p>\n<p>Y en ese sentido es que el machboos (o tambi\u00e9n majbus) se \u00abcompone\u00bb en varios pasos durante horas, como clara contrapartida a la cocina r\u00e1pida de cinco ingredientes. Porque contiene al menos una veintena de ingredientes y condimentos.<\/p>\n<h2>La receta secreta de machboos de la cocinera de la televisi\u00f3n<\/h2>\n<p>\u00abCada familia tiene su propia receta, con sus propios trucos\u00bb, dice <strong>Aicha Al Tamimi<\/strong>, una conocida autora de libros de cocina y cocinera televisiva de Catar, que da cursos en la \u00abCooking Academy\u00bb de Doha.<\/p>\n<p>En su caso, se rehogan unos aros de cebolla y se agrega pur\u00e9 de tomates, hojas de curry y apio cortado. Le siguen unos chiles. \u00abPero, por favor, sin cortar, dejarlos enteros\u00bb, aconseja Aicha Al Tamimi.<\/p>\n<blockquote><p>Para que tenga un toque c\u00edtrico, tambi\u00e9n se agregan algunos loomis (limones negros) a la olla. Se trata de limas disecadas compradas en el mercado y muy populares en el mundo \u00e1rabe. Pueden ser sustituidos por ralladura de lim\u00f3n.<\/p><\/blockquote>\n<p>Luego, se agregan los condimentos. Aicha a\u00f1ade bastante \u00abebsar\u00bb. As\u00ed le llama a una mezcla creada por ella misma de 17 especias diferentes, entre ellas, pasas de uva, canela, comino tostado, cilantro tostado y cardamomo. Le siguen c\u00farcuma, comino, trigo molido, hinojo, cilantro as\u00ed como ajo y jengibre rallado.<\/p>\n<h2>El pollo se cuece primero en ese caldo y luego en el horno<\/h2>\n<p>Antes de que la olla se rellene con agua hirviendo, en esa mezcla de condimentos y verduras se colocan varios medios pollos, y se remueve hasta que estos hayan adquirido el color amarillento rojizo.<\/p>\n<p>Luego, se agrega el agua y se hierve a temperatura baja todo el caldo. La ventaja es que as\u00ed el pollo le da el sabor al caldo y al mismo tiempo absorbe los aromas orientales.<\/p>\n<p>Tras al menos 40 minutos, se retiran los trozos de pollo y se pincelan con un adobo de aceite de oliva, pur\u00e9 de tomate, canela, cardamomo, c\u00farcuma y un poco de agua de rosas con azafr\u00e1n.<\/p>\n<p>El agua de rosas mezclada tiene un gran papel en la cocina \u00e1rabe y siempre est\u00e1 a mano. \u00abEn media botella de agua de rosas se deber\u00eda a\u00f1adir solo muy poco de azafr\u00e1n. Si se utiliza demasiado, sabe a perfume o jab\u00f3n\u00bb, dice Al Tamimi.<\/p>\n<p>Mientras que los medios pollos se terminan de hacer durante una media hora en el horno, se a\u00f1ade arroz a la olla.<strong> \u00abPero antes debe ser remojado durante una hora en agua fr\u00eda\u00bb, explica la cocinera. \u00bfY cu\u00e1nto arroz debe ser? Eso depende de la cantidad de personas. \u00abSiempre calculo una taza grande para tres personas\u00bb, es su regla.<\/strong><\/p>\n<h2>El arroz absorbe totalmente el caldo condimentado<\/h2>\n<p>Como sea, se debe poder ver el arroz en la olla a trav\u00e9s del caldo hirviendo. \u00abSi no, hay demasiado l\u00edquido en la olla y hay que retirar un poco. Este no se deber\u00eda tirar. Se puede echar m\u00e1s adelante sobre el arroz o guardar para otra comida\u00bb, explica la cocinera.<\/p>\n<p>Mientras que la olla sigue hirviendo a fuego bajo y el pollo est\u00e1 en el horno, Aicha Al Tamimi prepara la guarnici\u00f3n. <strong>As\u00ed llama ella a la capa sobre la que ser\u00e1 colocado el pollo sobre el arroz.<\/strong><\/p>\n<p>Para ello, rehoga en una sart\u00e9n con aceite de girasol bastones de zanahorias, trigo molido, pasas de uva, ar\u00e1ndanos rojos secos, almendras, cebollas, dos huevos cocidos enteros, as\u00ed como el interior oscuro de los loomis. <strong>Todo es condimentado con c\u00farcuma, canela, comino, cardamomo, sal y otra vez la mezcla \u00e1rabe de 17 especias.<\/strong> Una vez terminada la preparaci\u00f3n de la guarnici\u00f3n, el l\u00edquido en la olla se habr\u00e1 absorbido totalmente y se puede servir con perejil picado.<\/p>\n<p><i class=\"lang-es\"><span class=\" readonly\" title=\"\">Por Claudia Wittke-Gaida (dpa)<\/span><\/i><\/p>\n","protected":false},"excerpt":{"rendered":"<p>(dpa) &#8211; En Catar es tradici\u00f3n servir mucha comida.
