Y, ya sea en un molde o en una bandeja de horno, c\u00fabralo con una fina masa de queso quark y a\u00f1ada algunos peque\u00f1os trozos de masa de chocolate o de \u00abstreusel\u00bb (migajas hechas de mantequilla, harina y az\u00facar tradicional en Alemania) desmenuzados como cobertura.<\/p>\n<blockquote><p>Lo que aqu\u00ed parece ser una ligera transformaci\u00f3n de la cl\u00e1sica torta de queso, se denomina en Alemania muchas veces como \u00abRussischer Zupfkuchen\u00bb.<\/p><\/blockquote>\n<p>Pero quien piense que <a href=\"https:\/\/www.eldigitaldeasturias.com\/noticias\/category\/gastronomia\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #ff6600;\"><strong>el pastel<\/strong> <\/span><\/a>es una especialidad del pa\u00eds de los pelmeni y los pierogi y que se fue transmitiendo mediante las \u00abbabushkas\u00bb (abuelas) rusas, se equivoca. Porque, en la propia Rusia, la tarta de queso y chocolate justamente se llama \u00abtarta alemana\u00bb.<\/p>\n<p>\u00bfY de d\u00f3nde procede esta receta?<strong> \u00abEso realmente no ha podido ser aclarado\u00bb, comenta Susann Jaensch, de una editorial de la ciudad oriental germana de Leipzig<\/strong>.<\/p>\n<p>Jaensch estima que esta denominaci\u00f3n fue en realidad un golpe de marketing de una conocida <strong><span style=\"color: #ff6600;\"><a style=\"color: #ff6600;\" href=\"https:\/\/candas365.es\/noticias\/category\/canal-empresas\/\" target=\"_blank\" rel=\"noopener\">empresa<\/a><\/span><\/strong> alemana, que a comienzos de la d\u00e9cada de 1990 introdujo en el mercado una mezcla para hornear del mismo nombre.<\/p>\n<p>El nombre se pens\u00f3 probablemente porque las chispas de chocolate del pastel, cuando no estaban horneadas, parec\u00edan supuestamente las torres de las iglesias rusas. \u00abPero efectivamente hab\u00eda que tener mucha imaginaci\u00f3n\u00bb, dice Susann Jaensch.<\/p>\n<p>Y, quien quiera ponerse a cocinar este pastel, no deber\u00e1 quedarse en la masa quebrada de chocolate y quark. <strong>\u00abEsta torta tambi\u00e9n puede enriquecerse con manzanas, guindas, mandarinas u otras <span style=\"color: #ff6600;\"><a style=\"color: #ff6600;\" href=\"https:\/\/candas365.es\/noticias\/por-que-son-saludables-las-frutas-y-verduras-amargas\/\" target=\"_blank\" rel=\"noopener\">frutas<\/a><\/span>, dependiendo de la estaci\u00f3n del a\u00f1o\u00bb, comenta la estilista de comidas y autora de libros de cocina Anna Walz<\/strong>.<\/p>\n<p>Su consejo es secar bien las frutas con un trozo de papel de cocina y pasarlas ligeramente por f\u00e9cula de ma\u00edz antes de a\u00f1adirlas a la masa de queso quark.<\/p>\n<blockquote><p>\u00abLa f\u00e9cula de ma\u00edz une el l\u00edquido de la fruta\u00bb, explica Anna Walz. Y advierte que las frutas demasiado h\u00famedas pueden impedir que la masa de quark se ponga firme al hornearla.<\/p><\/blockquote>\n<p>Utilizar mantequilla para hornear el \u00abRussischer Zupfkuchen\u00bb es una posibilidad, pero tampoco resulta imprescindible. \u00abNuestra autora de libros de cocina Gudrun Dietze, de Turingia, &#8216;apuesta&#8217; por la margarina para la masa y la mantequilla para la cobertura\u00bb, afirma Susann Jaensch.<\/p>\n<p>\u00abPero se puede emplear mantequilla tanto para la masa como para la cobertura\u00bb, asevera. Finalmente, detalla, se trata sobre todo de una cuesti\u00f3n vinculada con el gusto o la cantidad de calor\u00edas.<\/p>\n<p>Quien haga la masa quebrada con mantequilla, deber\u00eda trabajar r\u00e1pidamente y no amasarla demasiado tiempo, recomienda Anna Walz. Porque amasar largo tiempo impide que el piso de la masa realmente se emblandezca.<\/p>\n<p>\u00abOtro consejo de Dietze es prestar atenci\u00f3n a no tomar demasiada harina para la masa, en lo posible no m\u00e1s de 300 gramos para un molde normal desmontable de 26 cent\u00edmetros de di\u00e1metro\u00bb, apunta Susann Jaensch.<\/p>\n<blockquote><p>Si se utiliza m\u00e1s, la masa puede secarse r\u00e1pidamente \u00aby eso afecta la vivencia del gusto en alguna medida\u00bb.<\/p><\/blockquote>\n<p>Tambi\u00e9n es posible cocinar un \u00abRussischer Zupfkuchen\u00bb en modalidad vegana. \u00abEn este caso se emplea margarina vegana tanto para la masa como para el &#8216;streusel'\u00bb, comenta Anna Walz.<\/p>\n<p>Seg\u00fan aclara Susanna Jaensch, los huevos no son imprescindibles para lograr el \u00e9xito de esta receta. \u00abPara el relleno, se puede utilizar un sustituto del quark a base de yogur de soja y polvo de bud\u00edn de vainilla, por ejemplo\u00bb. A la vez, entretanto tambi\u00e9n hay muchos tipos de leche vegetal.<\/p>\n<p>Y da igual si esta creaci\u00f3n culinaria se denomina \u00abRussischer Zupfkuchen\u00bb o tarta de queso y chocolate. <strong>Lo importante es cu\u00e1l es la mejor manera de lograr que salga bien<\/strong>.<\/p>\n<p>Anna Walz recomienda asegurarse de utilizar s\u00ed o s\u00ed buenos ingredientes, como el cacao de alta calidad. \u00abY dejarse el tiempo para cocinarlo con amor\u00bb, asevera. Entonces gustar\u00e1 a pr\u00e1cticamente todos los comensales.<\/p>\n<h2>\u00bfC\u00f3mo se cocina el \u00abRussischer Zupfkuchen\u00bb?<\/h2>\n<p>Anna Walz tiene una receta para una bandeja de horno (dimensiones interiores: 41 por 35 cent\u00edmetros): mezcle 500 gramos de harina con 40 gramos de cacao en polvo, un paquete de levadura en polvo y una pizca de sal en un bol. A\u00f1ada 250 gramos de mantequilla en dados peque\u00f1os y mezcle con el gancho de amasar de una batidora hasta que se desmenuce.<\/p>\n<p>Por \u00faltimo, agregue 250 gramos de az\u00facar en polvo tamizado y dos huevos medianos. Amase todo ininterrumpidamente hasta conseguir una masa uniforme. Envuelva en film transparente y ponga a enfriar durante una hora aproximadamente.<\/p>\n<p>Mientras tanto, bata tres huevos con 100 gramos de az\u00facar durante ocho minutos hasta que tengan una consistencia cremosa. Derrita 150 gramos de mantequilla en un recipiente a fuego lento y deje que se enfr\u00ede un poco. Lave un lim\u00f3n ecol\u00f3gico en caliente, s\u00e9quelo y ralle finamente unas tres cucharaditas de c\u00e1scara, posteriormente exprima el zumo de la fruta.<\/p>\n<p>Mezcle la mantequilla y otros tres huevos con 200 gramos de az\u00facar, la ralladura y el zumo de lim\u00f3n, as\u00ed como 1,5 kilogramos de queso quark bajo en grasas y un sobre de bud\u00edn de vainilla en polvo hasta que est\u00e9 uniforme. Incorpore los huevos batidos anteriormente.<\/p>\n<p>Precaliente el horno a 180 grados. La fuente para horno debe ser engrasada, luego rev\u00edstala con papel de hornear. Despliegue sobre la superficie de amasado enharinada dos tercios de la masa como para el tama\u00f1o del molde y p\u00f3ngala sobre el papel de hornear.<\/p>\n<p>Con sus dedos, forme un peque\u00f1o borde alrededor.
